Just thin about the attributes of Galvanized cable. Why, do we suppose, it is so popular? Price? Sure. Durability? Sure. I think the “self healing” properties of the zinc is a plus.

I’m not sure of the pros and cons, I’ve not used stainless as, I believe, it is brittle and breaks sooner at joins.
At least that is based on what we do here with glider/sailplane rudder cable,

Robert------------- On mine I have the battery in the back also, so I have a couple bolts going through bulkhead on the fuselage.
From these the battery cables run to the engine and on the back

Use a battery tender. They have a cool plug you can leave laying in the tail then just plug in pulling the seat forward to access. That’s my suggestion.
